Signature Series


The Signature Series are the highest quality wines we offer, resulting in the most flavourful possible wine. The reds in this lineup are the only ones that come with grape skins, giving velvety tannins to complete the complex characters of each wine. Each kit takes 7 to 8 weeks from starting until bottling, and gives you approximately 30 bottles (23 Liters) of wine.

Customizations: You can choose to forgo the oak, or change the oak types if you prefer different aromas and flavours. All of the wines are considered dry or off-dry and we can sweeten any wine to fit your taste. These kits come with labels, and you can choose from a wide variety of shrink caps to put a professional finish on your wine, or ask us about custom labels.

Reds

Amarone Style, Italy

The Amarone Style wine is made of Corvina, Corvione, Rondinella and Oseleta grapes in such a way that they become concentrated in flavours and sugars. Once fermented, this full-bodied red exudes flavours of tart cherry and raspberry, with hints of chocolate and spice. At the end, it gives a long lingering finish.

The robust red fruit intensity goes beautifully with beef braised in amarone, tripe, veal cheek, or duck cooked in balsamic vinegar. Wild game matches well with this wine, as do strong cheeses such as aged parmegiano, gorgonzola, or blue cheese.

Cabernet Merlot, France

This charming red blend eloquently decorates the tastebuds with hints of black currant, plum and dark berries, and provides subtle mineral notes. The cabernet grape skins also add a firm structure and tannins to this wine, making it an instant favourite.

Tannins in this Bordeaux style wine pair very well with fatty meats like beef and lamb. The blend also tastes divine with bolognese sauce, lasagna and especially rosemary lamb. For the more laid back wine lovers, this wine and pepperoni pizza are a match made in heaven.

This crimson red classic caters to the admirers of dark berry fruit. The wine also offers notes of spice and vanilla with plush tannins and a dry finish. The grape skins used in this wine allow for strong tannins, but can be cut down with the right food pairing.

Of course, Cab Sauv pairs beautifully with red meat, so serve it with steaks, burgers, short ribs, sausages or lamb veal.
